Motivation
Bump to latest golang version. This aligns with argo-events which has bumped and we import.
Modifications
Bumped each instance of 1.23 to 1.24 (or latest 1.24.2 where specified)
Updated mockery to latest release of v2 (2.53.3) for compatibility with this change.
