refactor(docs): consolidate and refactor interception script documentation

Currently, the documentation about the interception script is located in two places.

• docs/admin/developer/scripts
• docs/script-catalog

This needs to be consolidated in one place, which as per this chat should be under script-catalog.

The complete list of tasks:

• refactor(docs): move and merge interception script documentation from developer/scripts to script-catalog #5925
• refactor(docs): update navigation to include sub-types of scripts #5928
• fix(docs): change the Cache refresh script naming to Link interception script #5927
• fix(docs): provide missing links to the scripts in the listing #5926
• refactor(jans-auth-server) : leave the assets for OOTB scripts inside the jans-auth server and move the remaining to script catalog #5929
• docs(refactor): Organise and rename the Fido external authenticator script to Passkey Interception Script #9578
