Change license to MIT

I like openness, Vavr is non-commercial. Changing the license to MIT makes it easier for commercial software to adopt Vavr.

The issue will be resolved by replacing the current APACHE license with the following license, am I right?
In t this case, It'll be an easy task to do and I could do that for my first contribution.

Please also replace the LICENSE file with the MIT License. There exists a template and you need to insert Vavr somewhere. Additionally, there exist a .scala file as part of the generator that contains a copyright string I think.

#2738 Here is the PR.
I try to find all things related to Apache license stuff and replace them with MIT license, but in the end, it seems we have two identical files in the root, I mean COPYRIGHT and LICENSE files.
The COPYRIGHT file only usage was in the following Gradle task:

tasks.named('jar') {
    from('.') {
        include 'COPYRIGHT'
    }

    manifest {
        attributes('Automatic-Module-Name': 'io.vavr')
    }
}

I think it's possible to remove COPYRIGHT file if you agree.
Here is an MIT-licensed project that shows only LICENSE file will be sufficient.
