Run internal crates tests on MacOS/Windows in the CI

## Why
We want to include testing of internal crates on the MacOS and Windows platform in the CI.

## What
Run tests for all the internal crates on the MacOS and Windows platform in the CI.

## How

- [x] Run the tests by default on the whole workspace and remove crates which are not relevant (`mithril-aggregator`, `mithirl-signer`, `mithril-client-wasm` and `mithril-metrics`)
