This PR updates the connector samples to match Steeltoe changes at SteeltoeOSS/Steeltoe#1528.
I've tested all locally and in Dhaka where possible. Only Valkey fails in Dhaka, because LUA scripting is turned off. I've opened an internal request to address that.
