As the name suggests, this PR adds changes to the server code that make it adapt to the various networks we plan to deploy it:
Etherum MainnetGoerli TestnetXdai ChainXdai Chain ForkAlongside the above, we've also changed the way we fetch token information, ditching the Ethplorer API and relying on getting that data directly from the respective chain (via the provider)
