[AnVIL DX]Remove species from the summary response and replace with BioSamples

For the AnVIL Explorer, the summary display of species is always zero.
Additionally, AnVIL Explorer uses the term Organism Type instead of species.

Approach

1. Change the name of the displayed value to "Organism Type."
2. Check that the mapper from the Azul Summary response correctly populates the display.
