Closes #183 by upgrading numpy to >2.0,<3.0.
I also removed some mypy checks, and fixed some more obvious mypy errors. In the future I might go back in a dedicated PR and fix the rest of this mypy crap, but it's really not worth the time or the constant errors right now. I'd rather have the pipelines show green 😁 .
