[nrfconnect] Disable GPIO for MCUBoot (project-chip#24038)

Reduce the size of bootloader by disable GPIO on all boards
except nRF7002 DK. The latter needs GPIO because it uses
SPI flash.

By the way, remove broken links in READMEs.
