Add short homework for each R tutorial

Students were interested in having a (short) homework assignment following up on each tutorial to provide the opportunity for reinforcing what they had learned. Could include both coding but also describing what models mean / writing out a model with described behavior (see XXXXX). This would replace turning in the tutorials themselves for grades.

To avoid this being burdensome, flexibility in timing of turning in assignments was of interest.
