This probably isn't so much an issue as a question: Is there any way I can specify the path to the PhantomJS executable? There are several versions of PhantomJS installed on my system and I'd like to choose a particular one.

Sorry, there currently isn't a way to specify which PhantomJS to use, though that does sound like a useful feature. If you'd like to make a pull request, I think it would make sense to have a function like webshot::set_phantom_path() that will tell webshot where to look for it.
