サーバーモードの場合、うまく動きました。外付けマイクを使用するのですが、MME外付けマイクであっていますか？

MIMEで問題ないならMIMEでよいです。
WASAPIを使用するとより低遅延になる場合がありますが、一般にMIMEのほうが安定しているようです。
