Should this be /en/stable? Not sure whether we prefer sending users to stable or latest documentation?

Seems it used latest since starting using doc, and also change so fast, it should better to use latest..

I think we can now use proper internal links so the URL will link to whichever version the user is already on

No, using MkDocs cross referencing.
