Update `/dashboard` to be `/ui` for proxy

The UI has been accessible via the proxy by visiting `/dashboard` for a given project/venue.

Now that we have updated our UI to use an improved URL structure, we want to change `/dashboard` to `/ui` to further improve URL readability.
