fix: revert code, upgrade server

• The main cause of the issue seems to be deep down related to Sentry not supporting way to parse headers with core nodejs causing server crash which caused the outage.
• Current issue should be fixed after the upgrade: fix(node): support undici headers as strings or arrays getsentry/sentry-javascript#10938
• logs looks fine

- Enabled Always online for `dvc.org` - Used this opportunity to refactor error handling

It was trying to set headers to tracking outgoing requests, Github api in this case. I feel, it's not required in our project specially in the nodejs side.
