tests: Run through and update all testcontainer images

I'm not sure this is something we could enable dependabot for but we should periodically update the images we're using (qdrant, pgvector, etc.)

We could also choose to run a matrix style test if we think it's meaningful to test multiple versions of these systems.

At time of writing we're currently on:
