The file location for Google Drive is grayed out in the app itself but allows me to set as default storage provider in the Apple Settings App.

what does this even mean, or how does it relate to this issue?

The API from Files App's Google Drive does not support opening folders but only single documents. Therefore, Google Drive is not supported. Therefore, this option shouldn't appear. I need to look for a way to disable this option.
