Mint Cinnamon image is corrupt.

When I combine the parts of the Mint Cinnamon ISO, trying to boot the USB shows three drives, two of which my Mac can read, and both return SquashFS errors when trying to boot.

You need to choose the one on extreme right

I ran iso.sh and manually combined the images separately and both had SquashFS errors reading address 0x6afff542.

How are you burning the ISO to the USB?

Raspberry Pi Imager (normally works for me until it decided to stop writing images) and Linux Mint's built in imaging tool

Please use balena etcher

It booted when I used balenaEtcher, but the install fails. I used /dev/nvme0n1 for the bootloader. Should I be use /dev/nvme0n1p1 (the EFI)
