While tests are skipped, this prevents the job at least from regressing the build configuration on macOS, which is unfortunately quite frequent and disruptive for local development.

For example, it is known that this configuration regresses with CMake 4.0. Enabling these options on macOS CI ensures that accidental CMake update to a broken version is not committed to the main branch.
