Added a note on italics - I think we need something to indicate the introduction of new terms and definitions, and I propose it to be italic text.

I think it should be quotes – works better for screen readers

A quick Google search yields:

Short answer? No. By default, screen readers do not distinguish between regular text and italic text (or bold text, for that matter). Additionally, it will not distinguish the use of <strong> and <em> either.

OTOH, some screen readers read quotes:

Symbol The character by itself In Context JAWS 15 NVDA VoiceOver
double quotation mark I feel “fine,” she said, sarcastically. By itself: “quote”
In context: “I feel quote fine quote she said sarcastically”
By itself: nothing
In context: nothing
By itself: “quote”
In context: VoiceOver pauses but does not say “quote”
