Describe how to set the version for an app in a CTR flow

Currently we do not discuss how to set the version for an app in CTR  flow at launch time.   
This [issue](https://github.com/spring-cloud/spring-cloud-dataflow/issues/5909) discusses how to do it.   We need to add this documentation.
