Enabled maven-checkstyle plugins according to spring-cloud-builds instruction, fix projects checkstyle issues, extend gitignore
Update pom file im doc submodule to add plugins. Preserve spring-boot and spring-cloud-build version after updating spring-cloud-build parent
Updated project parent dependencies to last spring-cloud train. Removed deprecated netflix dependencies, replaced deprecated Lifecycle with Registration, ServiceRegistry and AutoRegistration semantics.

As a first draft, updated spring-cloud dependencies 3.1.0-SNAPSHOt and spring-boot version to 2.6.0 with support of existing functionality (not sure about config).
