Add a CLI flag to force sending Stereo sound

I use sonobus in headless mode to share sound between two computers on the same network. Unfortunately Sonobus doesn't save state for the Mono / Stereo option when restarted with systemctl.

Would it be possible to add a flag for that in the CLI directly?
