[🌟 Feature Request] Support UUID v7

UUID v7 is becoming extremely popular due to it's timzone and lexicographical sorting features.

Let's make it a standard for redis-om as well.

Since it creates new UUID types, I doubt there will be any backward compatibility issues or collisions

Update:

• On further investigation it seems as though ulid is compatible with UUID at 128 bits
• I think this request would just translate to updating to python-ulid 3.0.0 in that case

I don't see a reason to stick to v1

Valid feature request. UUID v7 provides timestamp-sorted UUIDs with broad ecosystem compatibility.

Current state: Redis OM uses ULID by default, which is already:

• 128-bit (UUID compatible)
• Lexicographically sortable by timestamp
• Time-based (first 48 bits are timestamp)

Workaround - use custom PrimaryKeyCreator:

import uuid

class UUIDv7PrimaryKey:
    @staticmethod
    def create_pk(*args, **kwargs) -> str:
        return str(uuid.uuid7())  # Python 3.11+ required

class MyModel(HashModel):
    class Meta:
        primary_key_creator_cls = UUIDv7PrimaryKey

Since ULID provides similar functionality and UUID v7 can be used via custom PrimaryKeyCreator, this is lower priority. Keeping open for consideration as a built-in option.
