Document model and field classes in depth

Document the model classes and field possibilities in-depth:

• JsonModel
• HashModel

Fields:

• String fields
• Date fields (no range queries yet!)
• Numerical fields (these do support range queries)
• Lists that become "tag" fields

This file should probably give more details about how this model interacts with RediSearch/RedisJSON schemas.
