Remove holoviews pinning

#704 introduces an upper bound pin on holoviews because it has changes that seem to have broken cudf usage inside cuxfilter. Specifically, we were seeing failures in building the doc notebooks. @jakirkham pointed to holoviz/holoviews#6476 as a possible culprit. cuxfilter may need some code updated for the integration to work with the latest versions of holoviews.

Would add also that we had to explicitly pin Holoviews in the docs build even though we already pinned it in cuxfilter's dependencies

This is odd as picking up the latest build of cuxfilter should already constrain Holoviews. So for some reason that is not working as expected. This merits further investigation
