Add UnitTesting cluster to a chef example (#31787)

- Adds unit testing cluster to rootnode_contactsensor_27f76aeaf5 device.
- This allows testing MEI elements on chef-supported targets.

Testing done:
- Rebuilt example, ran TC-IDM-10.2
