Cross-reference errors across chapter 2 #503

Description

There are multiple cross-reference errors across the new version of the book and I created a general issue for that but now I realize every chapter has that and this is particularly only for chapter two.

We fixed and made PR for each affected section. This was done after the above closed-PR.

In switching to the PreTeXt tab interface, we've had to fix up the xrefs a different way.
