chore: [IOPLT-2005] Bump @xstate/react to v5

Short description

This pull request updates the @xstate/react dependency from version 4.x to 5.x across the project.
The main goal is to ensure compatibility with React 19 and resolve the unmet peer dependency warning currently reported during pnpm i.
Check migration doc to ensure everything is fine

• Upgraded @xstate/react from version ^4.0.1 to ^5.0.5

• pnpm validate should pass
• Ensure that every xstate flow are working as before
