Modify docker compose reference in quickstart and correct curl to http

• Remove reference to standalone Docker Compose because it's bundled in Docker
• Correct curl requests to use http without security

I think we already did the docker-compose SOMECMD to docker compose SOMECMD already?

@epugh Yes, we did change the commands but we left the docker-compose reference in the troubleshooting section. Now that compose is part of docker, users will not encounter these issues, so I removed them.
