Add helper methods to enable gestures (and set some added config)

Rather than use the Leap gesture enabling methods directly wrap them in enabler methods that also optionally set stuff like minimum sensitivities (recently introduced) and whether or not the buffer system "consumes" the specific gesture when it has qualified for use once.
