InstanceConnectEndpoint should be able to select subnet

Currently, InstanceConnectEndpoint always selects the first subnet from the default Vpc.selectSubnets() output.
This makes it impossible to control which subnet the endpoint is placed on, which can be critical in scenarios where specific subnets are required
