Have more metrics about publications in https://nf-core-stats.netlify.app/

I mean, we have https://nf-co.re/publications already - but no consolidated stats about number of publications over time, citations for those papers, and so on

The GA4GH notebook above has some nice plots: growth over time, top journals and so on. I reckon it wouldn't be so difficult to do given that we already have a giant list of DOIs.
