Extension management page doesn't mention that you can turn off update per-extension

https://code.visualstudio.com/docs/editor/extension-marketplace#_extension-autoupdate only mentions the global setting, but it seems you can disable updates per-extension:

Need to add mention of Install Another Version feature, which if a previous version is installed will have Ignore Updates checked by default
