Describe the Pull Request
Allow beta Xcode versions of the form x_beta_y when using the Xcode recipe to install Xcode. Also updates the minimum_required_os function with more recent Xcode releases and their requirements.
Justification
Attempts to install Xcode with the version "26_beta_3" have been failing because the Version gem does not expect underscores in the versions strings it is given.
