web: redesign the ledger screens after the MUI conversion #909

Part of #674's Phase 3 follow-up redesign. Follow-up to #831 and its implementation PRs #899 and #900. This issue starts only after those conversion PRs land and #831's conversion scope is complete; it does not replace or delay that work.

Goal

Re-evaluate Sales, Stock, Inventory, History, Expenses, Feed, Water, and Reports after their MUI conversion. Produce a deliberate Operate / Inspect ledger system with stronger domain hierarchy than stock MUI tables and filter bars.

Design gate

Before production code changes:

• Capture every converted ledger screen at 1280×800 and 390×844, including representative filters, drill-downs, empty states, and write actions.
• Use /claude-design to produce at least three materially different ledger compositions using real seeded data.
• Demonstrate at minimum Sales, Stock, Inventory, and one operational log; one renamed generic table is not evidence for all eight screens.
• Design filters, row scanning, totals, status, provenance, drill-downs, and phone behavior as a system.
• Commit the selected artifact under docs/designs/674-*-redesign/ after owner sign-off.

Behaviour that must survive

• Existing date/range filters, paging, sorting, totals, status vocabulary, provenance, and exports.
• Sales allocation/payment actions and inventory movement semantics.
• Stock quantities/restrictions, FIFO-related facts, and grade identity.
• Feed/water operational entry behavior and Reports' period semantics.
• Role/flock scope, accessibility, three locales, and phone target floors.

Acceptance criteria

• web: convert the ledger screens to MUI — Sales, Stock, Inventory, History, Expenses #831, feat(web): redesign seven ledgers as a Field Console with MUI #899, and feat(web): redesign Sales with a MUI order desk and settlement rail #900 are resolved or merged before implementation begins.
• Owner selects a rendered direction before production implementation starts.
• Each ledger exposes its primary decision or action before secondary metadata.
• Production matches the approved artifact at 1280×800 and 390×844 in light and dark.
• Filter and table/list behavior remains usable without viewport overflow at 390px.
• Existing unit, integration, and Playwright behavior remains green; changed interactions gain tests.
• Before/after screenshots cover every affected route at both viewports, 1:1.
• The design artifact is committed with the implementation PR.
• The PR body contains Closes #NNN and its closing linkage is verified through GitHub's API.

Out of scope

• Reopening completed conversion issues or rewriting the conversion PRs' history.
• New business metrics or workflow changes unrelated to the redesign.
• Dashboard, Daily Entry, CRUD-list, or tail-screen redesigns.
