Instead of patching composer with regex (In an attempt to reduce the size of diffs), we now manipulate the Json using a round trip via json_encode. This makes it easier to re-use the `ComposerFile` class for the composer files in all the possible tooling directories. Signed-off-by: George Steel <george@net-glue.co.uk>
