🌱 (fix) Install-and-build.sh script to work on MacOs

• Fixes: Docs: Install-and-build.sh script fails while installing mdbook on Mac #4969
• Few formatting changes and enhancements :-)
• Using latest mdbook.

I'm waiting for a kubernetes-sigs member to verify that this patch is reasonable to test. If it is, they should reply with /ok-to-test on its own line. Until that is done, I will not automatically test new commits in this PR, but the usual testing commands by org members will still work. Regular contributors should join the org to skip this step.

We can see that the changes broke the job.

Looks like updating mdbook to latest version was causing this issue, as the latest Netlify build images does not have latest required GLIBC version. Have reverted back to v0.4.40. Now it has passed.

Also I had to change arch to use x86_64 as it is the only archType available for Darwin: https://github.com/rust-lang/mdBook/releases/tag/v0.4.40.
