This PR aims to simplify the necessity to update the release tag after every release in the README status section.
instead of updating manually after every release, this adds a badge with latest release that is updated automatically (I configured it not to include pre-releases since I don't want to show RCs), and also use the link to latest release which doesn't require any manual step (instead of link to a tag).
I got to this after noticing wrong release tag in the README for the second time.
(this was also the case after previous release and I fixed it in a PR).
please let me know if it makes sense.
