inferencepool chart sets a label that cannot be removed through helm

What happened:
helm chart default values specify label app. as a result it's not possible to use the helm chart to install an inference pool without this label in the selector (e.g., if I want to use pool with other labels).
What you expected to happen:
helm should work as expected
