Log no sensitive data

The EPP should not log the prompt or other sensitive data (model name is considered acceptable to emit) on any level higher than DEBUG. This issue is just to track that we have done a sweep to ensure our current logging is compliant.

I'm hoping to find time to do a sweep myself, @pierDipi did a great pass, I'd just like to be a second pair of eyes to see if I can catch some things. If i cant find time within the next week we can call this wrapped.
