FEATURE: Apply ES data types

Currently when the user maps a data type to a field, the list of data types is still a development list.

We need to actually pass the ES data types.

e.g.:

- View or create index
- Manage mappings
- Select type to map
- Under "Data Type" open the drop-down... what you see is a development list. This should be only types that ES knows/handles.
