Allow `lualatex-dev` as PDF engine

The latex-bin-dev package, which contains the development versions of LaTeX compilers, ships with binaries called pdflatex-dev and lualatex-dev. It would be nice if those could be used with --pdf-engine. Pandoc's current behavior is to throw an error:

Argument of --pdf-engine must be one of weasyprint, wkhtmltopdf, pagedjs-cli, prince, pdflatex, lualatex, xelatex, latexmk, tectonic, pdfroff, groff, typst, context
