Implement proper Linux networking support

Hey @jamesrochabrun, I was wondering if you would be interested in me adding Linux support for SwiftAnthropic the way I did for SwiftOpenAI in this pull request. My intention is to use this library on the server as well, which means using AsyncHTTPClient for the networking stack.

I figure this integration will be far simpler than the OpenAI version, but happy to provide more details as needed!
