[enhancement] Stocktake updates

Enhances the existing "stocktake" / "stock history" functionality as follows:

Enhancements

• Add ability to manually generate a stocktake entry for a given part
• Generate (and download) a stocktake report across category / location
• Adds a dashboard widget for generating a stocktake report
• Updated / improved documentation

Tasks

• Dashboard item for stocktake generation
• Manual stocktake for part
• Updated documentation
• playwright testing for dashboard item
