feat : Include torgeo models in the research

Torch geo models now support stac-mlm with this PR : stac-extensions/mlm#97 , Plan is to include this into the research and possibly use torchgeo to enable the range of the foudnation models that torch geo provides and explain it using stac-mlm ! This issue is open for the discussion , I see the strong possibility noting the fact that torchgeo with pytorch lightening is scalable ! Would be easy to bundle them to k8s clusters with stac-mlm metadata !

Don't hesitate to open issues and PRs while exploring different use cases and models.
Generation of MLM metadata torch.nn.Model has also been added in stac-extensions/mlm#102
The utilities are flexible, but we can most definitely improve their auto-detection mechanisms of model metadata with more concrete examples.
