EKS Pod Identity and Loki S3 Authentication Integration

I would like to request the integration of EKS Pod Identity for Loki S3 authentication. Currently, the project relies on the older IRSA method for authentication with S3, but I believe implementing EKS Pod Identity would provide a more secure and efficient solution.

Since it is the recommended approach for authentication in AWS, I really appreciate it if you can add this feature to the wonderful grafana stack, loki, mirmir, grafana. Everywhere.

hi, @eahangari-8x8 I did test with latest Loki version, and saw EKS Pod Identity working as intended

if you check the go.mod, you would see aws sdk > 1.47.x which is required by PodIdentity
