Revert MCP Gateway to v0.0.78

Reverts the MCP Gateway (gh-aw-mcpg) container version from v0.0.107 back to v0.0.78, the last documented stable version in CHANGELOG.

Changes

• pkg/constants/constants.go: Updated DefaultMCPGatewayVersion constant from v0.0.107 → v0.0.78
• 147 workflow lock files: Recompiled to reference ghcr.io/github/gh-aw-mcpg:v0.0.78

All workflows now pull the v0.0.78 container image at runtime instead of v0.0.107.
