Add Profiling

Arriving here from a hallway chat with @jernejstrasner @indragiek @phacops @hubertdeng123. We should aim to ship Profiling in self-hosted as close to GA as possible, ideally part of the same announcement but it's understood this is not a GA blocker.

• Publish the Vroom repo team-ospo#51
• https://github.com/getsentry/team-profiling/issues/188
• Add something to e2e test.
• Add to docker-compose.yml.
• Add to CalVer release pipeline.

This issue has gone three weeks without activity. In another week, I will close it.

But! If you comment or otherwise update it, I will reset the clock, and if you label it Status: Backlog or Status: In Progress, I will leave it alone ... forever!
