Create a new API Docs

Move the API docs from readme.io to git repository under the gemelo-ai/api-docs repository.

• create & configure new repository
• move existing documentation to the repo
• create new video API documentation
• set up necessary scripts to update the Swagger file (we can also do it manually, but c'mon)
